What are these clamps for?

For sharpening the knife to a particularly low/sharp angle. Especially important if you use knives with a narrow blade. For example kitchen knives or fillet knives.

How do they differ from the ones included in the kit?

The main difference is that the clamping jaws are as thin as possible. This shape allows you to lower the blade incredibly low and it will not touch the clamps. This ensures a sharp sharpening angle even if the edge is very close to the clamps.

How to clamp a knife if it does not have a flat part of the blade?

Usually, such knives have a bit of a straight section at the handle. In this case, one clamp is used in this part and the other clamp supports the tip of the knife.
