All. But, the thicker the knife, the more you will feel the effect of such sharpening. It makes little sense on thin, kitchen knives.  Folding, hunting and camping knives are where it will crack its potential.  Lenticular sharpening is far superior in reliability to wedge sharpening, which is also capable of making an effective cut. It is no coincidence that convex sharpening is favoured for axes and machetes
